Need to restore my frm3 back to factory settings, what’s the easiest/safest way to do so?

Just default coding is enought.
For E series use NCS Expert and recode with empty man file.
For F series just click Code in ESys

Do I not risk bricking it going to hit it with NCS and hope for the best.

No risk with coding. Flashing yes.

You can mess up you FRMs EEPROM by just reading out fault codes Smile

My only suggestion is to code it while the car is running or when charger is on.
